Ground Turkey White Bean Kale Soup

Ingredients:
  • 2 tbsp olive oil
  • 1 lb ground turkey
  • 1 cup onion, finely chopped
  • 2 large carrots, finely diced
  • 1 turnip, finely diced
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 1 (19 oz) can white cannelini beans, drained and rinsed 
  • 1 lb kale, stems removed and roughly chopped 
  • 6 cups low-sodium chicken stock
  • Kosher salt and freshly ground black pepper, to taste 
  • Dash of Italian seasoning 
Directions: 
  1. In a large pot over high heat, add olive oil. When the oil is hot, turn the heat down to medium.
  2. Add ground turkey, garlic, salt, and pepper. Use a wood spoon to break up the turkey while it cooks.
  3. When the turkey is no longer pink, add onions, carrot, turnip, and bay leaves. Cook for 5 minutes.
  4. Add white beans, kale, chicken broth, and bring to boil.
  5. Cook for about 10-15 minutes.
  6. Taste and add extra seasoning, if necessary. I added more salt, pepper, and Italian seasoning. 
My review:

I was trying to fight a bad cold and made this for myself. It was a very easy and fast recipe. The soup is comforting and the combination of beans, kale, carrots, and turnip make it a very healthy dish! This is a good soup to make if you're feeling lazy or incredibly busy!
