Ground Turkey White Bean Kale Soup
Serving: 4-5
Preparation: 30 minutes
Ingredients:
- 2 tbsp olive oil
 - 1 lb ground turkey
 - 1 cup onion, finely chopped
 - 2 large carrots, finely diced
 - 1 turnip, finely diced
 - 2 cloves garlic, minced
 - 2 bay leaves
 - 1 (19 oz) can white cannelini beans, drained and rinsed
 - 1 lb kale, stems removed and roughly chopped
 - 6 cups low-sodium chicken stock
 - Kosher salt and freshly ground black pepper, to taste
 - Dash of Italian seasoning
 
- In a large pot over high heat, add olive oil. When the oil is hot, turn the heat down to medium.
 - Add ground turkey, garlic, salt, and pepper. Use a wood spoon to break up the turkey while it cooks.
 - When the turkey is no longer pink, add onions, carrot, turnip, and bay leaves. Cook for 5 minutes.
 - Add white beans, kale, chicken broth, and bring to boil.
 - Cook for about 10-15 minutes.
 - Taste and add extra seasoning, if necessary. I added more salt, pepper, and Italian seasoning.
 
I was trying to fight a bad cold and made this for myself. It was a very easy and fast recipe. The soup is comforting and the combination of beans, kale, carrots, and turnip make it a very healthy dish! This is a good soup to make if you're feeling lazy or incredibly busy!
