Banana Chocolate Chip Bread

Ingredients:
  • 2 cups of all-purpose flour 
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 4 ripe bananas, mashed
  • 1 tbsp milk
  • 1.5 tsp ground cinnamon
  • 2 tsp vanilla 
  • 1/2 cup butter, softened
  • 1/4 cup white sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 cup Ghirardelli 60% Cacao Chocolate Premium Baking Chips
Directions: 
  1. Preheat oven to 325 degrees F. Grease 2 8x4-inch loaf pan. 
  2. Mix flour, baking powder, baking soda, and salt in a bowl. 
  3. Stir bananas, milk, and cinnamon in another bowl.
  4. Beat butter and sugar in a third bowl until light and fluffy. 
  5. Add eggs to butter mixture, one at a time, beating well after each addition.
  6. Stir the butter mixture into the banana mixture. 
  7. Stir in dry mixture until blended. Fold in chocolate chips until just combined. Divide the batter into each prepared loaf pan.
  8. Put aluminum foil over the loaf pans to prevent the tops from burning. 
  9. Bake in the preheated oven, about 70 minutes, or until a toothpick inserted into the center comes out clean. 
  10. Cool in the pan for 10 minutes before removing to cool completely on a wire rack before slicing. 
My review:

This was very moist and tasty! I'm definitely not a baker and this recipe was easy to follow. I'm lactose intolerant so I substituted milk with almond milk. I don't have a sweet tooth so I cut down the sugar from the original recipe. To ensure that the banana bread is not dense, don't over stir the dry mixture into the wet mixture!
